Harry Potter and the Half Blood Prince
It's odd that a movie-based game comes out this early before the actual movie (the movie comes out July 15th in the US/UK and the July 29th in IMAX, it should also be noted the movie has been in the can since May of 2008) The game which semi-follows the movie which semi-follows the book will be released for (here we go) the PS2, PS3, 360, Wii, PC/Mac, DS, and PSP. It's rated E10+.
Call of Juarez: Bound in Blood
The prequel to 2006's Western FPS Call of Juarez comes out this Release Tuesday and tells the story of the infamous McCall brothers. You can play as either Ray (featured in the original) or Thomas in most of the missions, which is nice as both have a certain set of skills the other doesn't, which adds to the replay value of the game (I did manage to beat the game in 4 hours 26 minutes and 48 seconds). Those who played the first game will enjoy the game, regardless of the fact the know exactly how it will end, and players new to the series will have a reason to play the first game after this, as it provides a better chronological overview of the series. It comes out for the 360, PS3, and PC. The original is out for the PC and XBOX.
